Banana Muffins

My friend Tami passed this recipe along to me, and we eat it quite often! It is another fantastic way to use up overly ripe bananas. These can be frozen, too, so make a double batch and freeze for breakfast later!

1 banana (mashed)
1 cup sugar
1 stick butter (melted)
1 egg (beaten in a one-cup measuring cup)
to the egg, add enough milk to equal one cup
1.5 cups flour
1 teaspoon baking soda
1 teaspoon vanilla

Preheat oven to 350.

Beat your egg in a measuring cup and add the milk to it. Add all of your ingredients together and mix just enough to moisten everything. Place in greased muffin pan or in paper muffin cups. Bake for 20-25 minutes.
