I got this super-easy recipe from a firefighter friend of ours. It has become a family favorite! Thanks, Brandon! I love to serve it with a side of pinto beans and corn on the cob. Ingredients: frozen or fresh tilapia filets (I use frozen) Zatarain's blackened seasoning 1/4 stick butter (melted) Directions: If using frozen fish, thaw it as directed on the package.
Brush or spoon butter onto one side of the fish, and sprinkle seasoning on the butter. This is a spicy seasoning, so go easy if you are sensitive to spice. Flip and repeat. Place the fish in a stove top skillet and cook until the fish is no longer transparent. Flip to the other side and cook the same. The fish will be done when it flakes apart.
Living in small town Oklahoma, I am married to the sweetest man you will ever meet. We have five young children, so I would now consider myself a professional juggler. I'm a wannabe crafter, cook, baker, and gardener. Some might call me crunchy. I'm okay with it.
