Homemade Pancakes

We're going to have breakfast for dinner again tonight. Yes, Jer is at the station, we're having friends over for an evening playdate, and the kids just LOVE breakfast for dinner! This is a great pancake recipe. So easy, and you have everything you need in your pantry or 'frig already! No need to buy those pancake mixes anymore!


1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter (melted)


Heat a frying pan or griddle on medium.

In a large bowl, sift together the flour, baking powder, salt and sugar. Pour in the milk, egg and melted butter; mix until smooth.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
