Oatmeal Blueberry Muffins

My mom made these for us when we were growing up. They were a favorite then and are still a favorite today! The oatmeal gives them a great texture and added fiber, and blueberries are full of antioxidants.


1.25 cups flour
1/2 cup sugar
1 cup oatmeal
1 teaspoon baking powder
1 egg
1/2 cup water
1/2 cup oil
1 cup blueberries (fresh or frozen)

Preheat oven to 400. Line or spray your muffin tin.

Mix all of your dry ingredients in a medium-sized bowl. In a separate bowl, combine your egg, water, and oil. Add the wet mixture to the dry and stir until moistened. Add the blueberries and stir. Fill your muffin cups 3/4 full and bake for 18-20.
