Meatless Monday is here once again! I am really wanting a big slice of pizza today, so I've decided to make this easy, light, delicious pizza for dinner tonight. This is a fairly common pizza, but I made up my own version of the recipe. Feel free to tweak it to your taste!
Rememberthis pizza dough?I'm going to use it for my crust, but I'll be using veggies and cheese only as the toppings (no sauce even!). It's going to be so good! Ingredients: All of the ingredients for the dough are listed in that post. 5-7 tomatoes (sliced thinly) fresh basil (chopped coarsely) 1 package mozzarella cheese (shredded) 1/2 cup Parmesan cheese (shredded or grated) olive oil one garlic clove pepper to taste Directions: Prepare dough as the directions say. Go ahead and bake it for about 10-15 minutes before topping it, so that it's nice and crispy.
After pulling it out of the oven, slice your garlic clove in half and rub it all over the warm crust. Drizzle olive oil over the crust, and add pepper to your liking. Place sliced tomatoes over the entire pizza, overlapping if you need. Toss the cheeses together and sprinkle them over the tomatoes. Bake for 20 minutes, or until cheese is melted and bubbly. Remove it from the heat and sprinkle the basil on.
