Wow! It's already Meatless Monday again. The weeks are just flying by me!! It is super cold here in OKC, so I thought that a good soup was in order for tonight's dinner. This is so quick, delicious, and full of vitamins.
3/4 bottle of vegetable juice
6 cups water+3 cups water
1 cup alphabet noodles
1 can mixed veggies (drained)
3 teaspoons beef granules (or three cubes beef boullion)
seasonings to taste (I used seasoned salt, pepper, and garlic powder.)
In a large pot, dissolve the beef granules in three cups of water. To this liquid, add the vegetable juice and six cups of water, veggies, pasta. Season well! Bring to a boil. Reduce heat and allow to simmer for 20 minutes. Serve with cornbread.
