What a fantastic side to the black-eyed peas and rice that we enjoyed for Frugal Friday! My mom ate this growing up, but she actually never fixed it for us when we were living there. She recently made it for my dad, and he loved it. This is about as simple a creation as you can have in the kitchen, and is really good!
oil for frying
1.5 cups cornmeal
1/2 teaspoon salt
2 cups boiling water
Preheat your oil for frying. You want to pan fry, so just a thin layer of oil is needed.
Mix the cornmeal and salt in a large bowl. Pour the boiling (it must be boiling!) water over it and mix well. The boiling water will actually begin to cook your cornmeal. It will make a sticky dough. Scoop out a handful and form into thin patties. Put the patties into the oil and fry for about three minutes on each side. Serve warm.
