Meatless Minestrone Soup

This is a quick, meatless version of minestrone soup. It's a great way to add lots of vitamins to your family's day. This whole soup is ready in about thirty minutes! It can also be cooked in the crock pot. If you do it in the crock pot, let it cook on low all day. About twenty minutes before serving, stir in the spinach and uncooked noodles.

2 carrots (chopped)
1 cup cabbage (chopped)
1 stalk celery (chopped)
1 small onion (chopped)
1 garlic clove (minced)
2 teaspoons oil
3 cups water
1 can diced tomatoes
3 cubes of beef bouillon
1 cup fresh spinach
2/3 cup elbow macaroni
salt and pepper to taste

In a large pot, heat your oil. Throw the chopped veggies (not the spinach or tomatoes) into the oil and let them cook for about five minutes. Pour in the water, bouillon, and diced tomatoes. Bring this to a boil, then turn the heat down to low. Simmer uncovered for 25 minutes. Stir in the spinach, macaroni, and spices. Allow to cook until the noodles are tender. This is great served with corn bread!
