Spinach and Cheese Lasagna Rolls

Are you ready for your meatless meal tonight? I'm going to be honest and tell you that we're actually having chicken tonight. This meal was yesterday's lunch, but it's meatless, so I saved it for today. I hope you like it. I know we sure did!

2 small containers (or one large container) ricotta cheese
1 container Parmesan cheese (shredded)
1 package mozzarella (shredded)
1 jar of your favorite sauce
1 package frozen spinach (dethawed and drained)
1 package lasagna noodles (cooked and drained)


Preheat oven to 350.

Pour a small amount of sauce into the bottom of a 9x13 baking dish.

In a large bowl, combine the ricotta, Parmesan, and spinach and mix well. Take a heaping spoonful of the mixture and spread it onto one cooked lasagna noodle. Starting at one end, gently roll the noodles into pinwheel shapes. Lay them on top of the sauce in the baking dish. Repeat until your pan is full.

Cover with the remaining sauce and top with mozzarella cheese. Place foil on top of the dish and bake for 45 minutes, or until cheese is melted.
