It's Meatless Monday!! I've shared with you before how much I love curry. I'm making my curry chicken for dinner tomorrow. Why not have curry twice in one week?! This is easy and rich, so make it before it gets too warm out!
1 bag frozen broccoli
1/2 cup water
2 tablespoons flour
2 tablespoons butter
1 tablespoon curry powder (or less to taste)
dash of tabasco sauce
1/2 teaspoon salt
1 can broth (chicken or veggie)
1 cup half and half
In a large pot, cook broccoli in boiling water until barely tender. In a food processor or blender, add the flour, butter, and seasonings. Add half of the broth, broccoli, and the broccoli water to the processor and puree it all. Pour it back into the pot and add the remainder of the broth and the half & half. Bring to a boil, stirring frequently.
